Pumpkin muffins with jam: a recipe for autumn gatherings

Autumn is already painting with its colors. It’s a magical time when nature displays its most beautiful hues. The queen of this season is the pumpkin – it’s the one that often graces our tables now. I decided to celebrate its entrance into my kitchen by making pumpkin muffins with jam.
You probably won’t be surprised that I’ve once again created something with yeast dough. This time, the star of the show is the juicy pumpkin, which gives my muffins a lovely pumpkin color, but more importantly, sweetness and delicacy. The muffins are soft and aromatic, and they melt in your mouth. I recommend using raspberry-blackberry jam as a filling, but the possibilities are endless! You can also choose raspberry, rose, cherry, plum (best with a hint of cinnamon), or blackberry jam. Alternatively, for chocolate lovers, muffins with chocolate mousse or Nutella work wonderfully. This is a recipe that you can adapt to your favorite flavors.
Pumpkin muffins delight with their taste and are the perfect solution for people with various dietary preferences. I created them primarily with allergies in mind, as they need to avoid animal milk and eggs, but they are just as delicious and accessible to everyone, regardless of their diet. Ingredients
- My glass holds 250 ml.
0.5 cup of oat milk,
0.25g fresh yeast,
3 tablespoons of sugar,
1.5 cups of all-purpose flour,
3 large spoonfuls of Hokkaido pumpkin puree (3 spoonfuls is half a small pumpkin),
2 tablespoons of olive oil,
powdered sugar and cinnamon sticks for decoration,
Jam
(it’s a good idea to choose a thick jam so it doesn’t spill while assembling the muffins).

- Starter
- I poured milk into a pot, added a tablespoon of sugar and flour.
- I heated the milk to about 40 degrees Celsius and crumbled the yeast.
- I stirred it and set it aside for about 15 minutes until the yeast starts to work.

- Pumpkin puree.
- I cut the small pumpkin in half, scooped out the seeds and peeled it.
- I diced it into small pieces and simmered it over low heat for 10 minutes until it softened.
- Then, I blended the pumpkin into a smooth puree and let it cool.

- I poured the starter into a bowl, added the puree, flour, sugar, and olive oil.
- I first mixed everything with a spoon, then I transferred the dough onto the countertop and kneaded it by hand.
- The dough will be slightly sticky to the touch while kneading due to the pumpkin puree in it.
- I kneaded the dough thoroughly by hand and set it aside for about 15 minutes to rise.

- I divided the risen dough into 10 small rounds.
- I placed one teaspoon of jam on each round.
- Then, I carefully sealed each round so that the jam wouldn’t spill.
- I tied the formed balls with baking twine so that after baking, they would resemble pumpkins.
- I placed the muffins on a baking sheet lined with parchment paper and placed them in the center of a cold oven.
- I preheated the oven and baked the muffins for about 25 minutes until a toothpick came out clean once the desired temperature was reached.
- After baking, I removed the pumpkin-shaped muffins from the oven and set them aside to cool.
- After the pumpkin muffins had cooled, I dusted them with powdered sugar and decorated them with cinnamon.
